Ingredients (serves 2):

  • 200 g linguine
  • 300 g fresh clams
  • 2 garlic cloves, minced
  • Fresh parsley
  • 3 tbsp extra virgin olive oil
  • Bottarga Mauritania, grated

Preparation:

  1. Sauté garlic and parsley in olive oil until fragrant.
  2. Add clams, cover, and cook 5 mins until they open.
  3. Finish cooking uncovered for 7–8 mins.
  4. Cook linguine al dente, toss with clams.
  5. Sprinkle generously with grated bottarga.
